Irish Pride BBQ Competition with Calor 2018 Week 13 Winning Burger Recipe

Irish Pride Black Bean and Mushroom Burger 

Ingredients:

Packet Irish Pride Burger Buns
About 12 shitake mushrooms chopped
1 red onion, finely chopped
6 spring onions, thinly sliced
4 garlic cloves, finely chopped
1 large red chilli, finely chopped
1 tsp Paprika 1 tin black beans, drained and rinsed
1 large free-range egg, beaten 100g fresh breadcrumbs Handful of fresh parsley, finely chopped
Juice of ½ lime 150g feta, crumbled 50g grated cheddar cheese guacamole (Marks & Spenser have nice tubs) sliced tomatoes & sour cream to serve

To Prepare:

Saute the onion and spring onion, until softened but not coloured. Add the garlic, chilli and paprika, Tip into a bowl, add the beans and roughly mash, then add the egg, breadcrumbs, parsley and lime juice. Season, then mix well to combine. Gently stir in the crumbled feta, then shape into burgers. Chill for 30 minutes. Heat the bbq.cook the burgers and for 3-4 minutes on each side.Serve on toasted buns lined with guacamole, sliced tomatoes and sour cream.
