<li>eggs (separated)</li>
<li>175g caster sugar</li>
<li>2 tsp vanilla extract</li>
<li>450ml double cream, whipped until thick</li>
<li>6 slices Irish Pride Wholemeal Sandwich bread crumbed</li>
</ul>
<p><strong>To Prepare:</strong></p>
<ul>
<li>In a large bowl whisk the egg whites until stiff, gradually add the sugar one tablespoon at a time until stiff and glossy.</li>
<li>Then lightly whisk the egg yolks and add this along with the whipped cream into the egg white mixture folding gently to keep the air.</li>
<li>Gently fold in the crumbed Irish Pride Wholemeal Sandwich bread, transfer to a freezable container and freeze for about 8 hours.</li>
<li>Take out of the freezer ten minutes before serving and enjoy.</li>

<p><strong>To Prepare</strong></p>
<ul>
<li>Empty the mincemeat into a large bowl and, using a wooden spoon, stir in the grated orange zest and brandy.</li>
<li>Sift the self-raising flour and spice together and stir into the mincemeat mixture with the breadcrumbs.</li>
<li>Stir in the beaten egg.</li>
<li>Spoon into a greased 900ml pudding basin, cover with a circle of pleated greaseproof paper, then a circle of foil and tie around the rim of the basin with string to secure.</li>
<li>Loop the string over and tie at the other side to make handles.</li>
</ul>
<p><strong>To bake</strong></p>
<ul>
<li>Put the pudding basin on an upturned saucer in a large, deep pan, and pour in boiling water until it comes halfway up the side of the pudding basin.</li>
<li>Cover and steam for 3 hours, topping up the water level occasionally.</li>
<li>Alternatively, cover loosely with greaseproof paper and microwave on high for 8-10 minutes.</li>
</ul>
<p><strong>To serve</strong></p>
<ul>
<li>Turn out onto a serving plate, dust with icing sugar.</li>

<li>Put the pot back on the heat and add in the cream and chopped ham and warm through.</li>

<p><strong>Breadcrumbs:</strong></p>
<ul>
<li>To make the breadcrumbs blend the 4 slices of Irish Pride Sandwich to make fresh bread crumbs.</li>
<li>Then heat a little olive oil on a pan and add in the breadcrumbs, crushed garlic clove and grated parmesan.</li>
<li>Cook for 5 minutes until the breadcrumbs are crisp.</li>
</ul>
<p><strong>To serve, place the pasta into a bowl and top with the delicious garlic breadcrumbs.</strong></p>
